Onam is around the corner and every restaurant with a banana leaf and a bag of raw rice will tell you they're doing a Sadhya. But a Sadhya is a specific thing. Twenty-plus dishes served in a specific order. The six Ayurvedic tastes represented on one leaf. A parippu-and-ghee opening that leads through sambar, rasam, moru, and lands on payasam. Done badly, it's a thali with delusions. Done properly, it's one of the most complete meals in Indian food.
We spent the last month sadhya-hunting. Eleven bookings across Bengaluru, Delhi, Gurugram, and Goa. Chef collaborations, home kitchens, community hubs, and Urbanaut Productions' own Sadhya in Goa.

The Great Goa Sadhya

Coconut gin cocktails from Stranger & Sons and a Kaapi Martini from Filtr sit alongside, all built on the same palm doing the work on the plate.
